- 1 kg (2.2 lbs) pork belly or pork shoulder (cut into cubes or strips)
- 1/2 cup soy sauce
- 1/4 cup banana ketchup (or tomato ketchup if unavailable)
- 1/4 cup brown sugar (or honey)
- 1/4 cup vinegar or calamansi/lemon juice
- 5 cloves garlic (minced)
- 1 medium onion (grated or finely chopped)
- 1 tsp ground black pepper
- 1 tsp paprika (optional, for smoky flavor)
- 1 tbsp oyster sauce (optional, adds richness)
- 2 tbsp cooking oil
- Bamboo skewers (soaked in water for 30 minutes to prevent burning)
Make The Marinade
In a large bowl, combine soy sauce, ketchup, brown sugar, vinegar/lemon juice, garlic, onion, black pepper, paprika, oyster sauce, and oil. Mix well.
Grill The Pork
Preheat grill or charcoal barbecue.
Grill skewers over medium heat, basting occasionally with the reserved marinade.
Cook for about 12–15 minutes, turning until pork is caramelized and cooked through.
