Ingredients
  

  • 1 kg (2.2 lbs) pork belly or pork shoulder (cut into cubes or strips)
  • 1/2 cup soy sauce
  • 1/4 cup banana ketchup (or tomato ketchup if unavailable)
  • 1/4 cup brown sugar (or honey)
  • 1/4 cup vinegar or calamansi/lemon juice
  • 5 cloves garlic (minced)
  • 1 medium onion (grated or finely chopped)
  • 1 tsp ground black pepper
  • 1 tsp paprika (optional, for smoky flavor)
  • 1 tbsp oyster sauce (optional, adds richness)
  • 2 tbsp cooking oil
  • Bamboo skewers (soaked in water for 30 minutes to prevent burning)

Instructions
 

Prepare The Pork

  • Wash and pat dry pork, then cut into bite-sized cubes or strips suitable for skewers.

Make The Marinade

  • In a large bowl, combine soy sauce, ketchup, brown sugar, vinegar/lemon juice, garlic, onion, black pepper, paprika, oyster sauce, and oil. Mix well.

Marinate The Mork

  • Add pork pieces to the marinade. Mix until evenly coated.
  • Cover and refrigerate for at least 4 hours (best overnight for richer flavor).

Skewer The Pork

  • Thread marinated pork onto soaked bamboo skewers. Reserve some marinade for basting.

Grill The Pork

  • Preheat grill or charcoal barbecue.
  • Grill skewers over medium heat, basting occasionally with the reserved marinade.
  • Cook for about 12–15 minutes, turning until pork is caramelized and cooked through.

Serve Hot

  • Enjoy with steamed rice, pickled vegetables, or dipping sauce.
