Cauliflower soup is a warm, comforting dish made primarily from cauliflower, a versatile and mild-flavored vegetable. It typically involves simmering cauliflower with ingredients like onions, garlic, and broth, then blending it into a smooth, creamy consistency.

Ingredients
  

  • 1 medium head of cauliflower, cut into florets
  • 1 tablespoon olive oil or butter
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream (optional, for creaminess)
  • Salt and pepper, to taste
  • Optional toppings: shredded cheese, croutons, chopped herbs, a drizzle of olive oil

Instructions
 

Sauté Aromatics

  • In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and cook until soft, about 5 minutes. Add the garlic and sauté for another minute.

Cook Cauliflower

  • Add the cauliflower florets to the pot and stir. Pour in the broth, bring to a boil, then reduce the heat and simmer for 15–20 minutes, until the cauliflower is very tender.

Blend

  • Use an immersion blender to puree the soup in the pot until smooth. Alternatively, carefully transfer the soup in batches to a blender and puree.

Add Creaminess (Optional)

  • Stir in the milk or cream. Heat gently without boiling.

Season

  • Add salt and pepper to taste. Adjust thickness with a little more broth or water if needed.

Serve

  • Ladle into bowls and top with your favorite garnishes.
