Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 8 cups chicken broth
  • 2 cups shredded cooked chicken (rotisserie or boiled)
  • 1½ cups egg noodles (or pasta of choice)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley (optional, for garnish)

Instructions
 

Sauté Vegetables

  • Heat olive oil in a large pot over medium heat. Add diced onions, carrots, and celery. Cook for 5–7 minutes until softened. Add garlic and cook for another 1 minute.

Add Broth And Seasoning

  • Pour in the chicken broth. Add dried thyme, salt, and pepper. Bring to a gentle boil.

Cook The Noodles

  • Add the egg noodles and cook uncovered for 8–10 minutes or until tender.

Add Chicken

  • Stir in the cooked, shredded chicken. Simmer for 5 more minutes to heat through.

Taste And Adjust

  • Taste the soup and adjust the seasoning with more salt or pepper if needed.

Garnish And Serve

  • Remove from heat. Garnish with fresh parsley and serve warm.
