Ingredients
  

  • 2 cups cooked chicken (shredded or chopped)
  • ½ cup mayonnaise (or Greek yogurt as a lighter option)
  • 1 celery stalk, finely chopped
  • 2 tablespoons red onion, finely chopped (optional)
  • 1 teaspoon Dijon mustard (optional)
  • 1 teaspoon lemon juice
  • Salt and black pepper to taste
  • 4 slices of bread (or croissants, buns, etc.)
  • Lettuce, tomato slices (optional for layering)

Instructions
 

Prepare The Chicken

  • If not already cooked, boil or grill chicken breasts until fully cooked. Let cool, then shred or chop into bite-sized pieces.

Mix The Salad

  • In a large bowl, combine the shredded chicken, mayonnaise, celery, red onion, Dijon mustard (if using), and lemon juice. Stir until everything is evenly coated.

Season

  • Add salt and freshly ground black pepper to taste. Mix well.

Chill (Optional But Recommended)

  • Cover and refrigerate the chicken salad for 30 minutes to allow flavors to meld.

Assemble The Sandwich

  • Toast the bread if desired. Spread the chicken salad onto one slice. Add lettuce or tomato slices if using, then top with the second slice of bread.

Serve

  • Slice the sandwich in half and serve immediately, or wrap it up for a picnic or lunchbox.
