Ingredients

  • 2 ¾ cups (660 ml) whole milk
  • ½ cup (100 g) granulated sugar
  • ⅓ cup (30 g) unsweetened cocoa powder
  • 3 tablespoons cornstarch
  • ¼ teaspoon salt
  • 3 large egg yolks
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

Mix Dry Ingredients

  • In a medium saucepan, whisk together sugar, cocoa powder, cornstarch, and salt.

Add Milk

  • Gradually whisk in the milk to avoid lumps.

Add Egg Yolks

  • In a separate bowl, beat the egg yolks. Slowly whisk a little of the milk mixture into the yolks to temper them. Then whisk the yolks back into the saucepan.

Cook The Pudding

  • Place the saucepan over medium heat. Stir constantly until the mixture thickens and starts to bubble — about 5–7 minutes.

Finish It Off

  • Remove from heat. Stir in the butter and vanilla extract until smooth.

Chill

  • Pour the pudding into individual serving dishes. Press plastic wrap onto the surface to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.

Serve

  • Top with whipped cream or your favorite garnish before serving.
