Cinnamon muffins are soft, fluffy baked treats flavored with ground cinnamon. They’re a type of quick bread made with flour, sugar, eggs, butter (or oil), and milk, with cinnamon added for a warm, sweet-spiced taste.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 ½ tsp ground cinnamon
  • ½ cup granulated sugar
  • ½ cup brown sugar (packed)
  • ½ cup unsalted butter (melted)
  • 2 large eggs
  • 1 cup milk (or buttermilk for extra softness)
  • 1 tsp vanilla extract

Optional Topping (For Extra Cinnamon-Sugar Crust):

  • 2 tbsp granulated sugar
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven
    to 375°F (190°C). Line a muffin tin with paper liners or grease it lightly.
  • Mix dry ingredients
    In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and both sugars.
  • Mix wet ingredients
    In another bowl, whisk melted butter, eggs, milk, and vanilla until well combined.
  • Combine
    Gently fold the wet ingredients into the dry ingredients. Do not overmix; batter should be slightly lumpy.
  • Fill muffin cups
    Spoon batter evenly into muffin tin (about ¾ full).
  • Optional topping
    Mix sugar and cinnamon, then sprinkle over muffins before baking.
  • Bake
    for 18–22 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool
    in the pan for 5 minutes, then transfer to a wire rack.
