- ½ tsp baking soda
- ½ tsp salt
- 1 ½ tsp ground cinnamon
- ½ cup granulated sugar
- ½ cup brown sugar (packed)
- ½ cup unsalted butter (melted)
- 2 large eggs
- 1 cup milk (or buttermilk for extra softness)
- 1 tsp vanilla extract
Optional Topping (For Extra Cinnamon-Sugar Crust):
- 2 tbsp granulated sugar
- 1 tsp ground cinnamon
Preheat ovento 375°F (190°C). Line a muffin tin with paper liners or grease it lightly. Mix dry ingredients In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and both sugars. Mix wet ingredients In another bowl, whisk melted butter, eggs, milk, and vanilla until well combined. Combine Gently fold the wet ingredients into the dry ingredients. Do not overmix; batter should be slightly lumpy. Fill muffin cups Spoon batter evenly into muffin tin (about ¾ full). Optional topping Mix sugar and cinnamon, then sprinkle over muffins before baking. Bakefor 18–22 minutes, or until a toothpick inserted in the center comes out clean. Coolin the pan for 5 minutes, then transfer to a wire rack.
