- 2 cups corn kernels (fresh, canned, or frozen)
- 1 cup cherry tomatoes, halved
- ½ cup red onion, finely chopped
- ½ cucumber, diced
- ¼ cup fresh cilantro or parsley, chopped
- 1 avocado, diced (optional)
- 1–2 tablespoons olive oil
- 1 tablespoon lime or lemon juice
- Salt and black pepper to taste
- ¼ teaspoon chili flakes or paprika (optional, for spice)
Prepare The Corn
If using fresh corn, boil for 3–5 minutes, then cool and cut off the kernels.
If using frozen, thaw and drain.
If using canned, drain and rinse.
Mix The Vegetables
In a large bowl, combine the corn, cherry tomatoes, red onion, cucumber, and avocado (if using).
