Ingredients
  

  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1 cup cherry tomatoes, halved
  • ½ cup red onion, finely chopped
  • ½ cucumber, diced
  • ¼ cup fresh cilantro or parsley, chopped
  • 1 avocado, diced (optional)
  • 1–2 tablespoons olive oil
  • 1 tablespoon lime or lemon juice
  • Salt and black pepper to taste
  • ¼ teaspoon chili flakes or paprika (optional, for spice)

Instructions
 

Prepare The Corn

  • If using fresh corn, boil for 3–5 minutes, then cool and cut off the kernels.
  • If using frozen, thaw and drain.
  • If using canned, drain and rinse.

Mix The Vegetables

  • In a large bowl, combine the corn, cherry tomatoes, red onion, cucumber, and avocado (if using).

Add Herbs And Dressing

  • Sprinkle in the chopped cilantro or parsley. Drizzle with olive oil and lime juice.

Season And Toss

  • Add salt, pepper, and chili flakes or paprika. Toss gently to combine.

Chill And Serve

  • Chill for 15–30 minutes for best flavor or serve immediately.
