For The Caramel
- - ½ cup 100 g granulated sugar
- - 2 tablespoons water
For The Custard
- 2 cups 480 ml whole milk
- 4 large eggs
- ½ cup 100 g granulated sugar
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Prepare the Caramel: Add sugar and water to a small saucepan over medium heat. Cook without stirring until the sugar melts and turns a golden amber color.
Pour the Caramel: Carefully pour the hot caramel into the bottom of individual ramekins or a round baking dish. Tilt gently to coat the bottom. Set aside to harden.
Warm the Milk: Heat the milk in a saucepan over medium-low heat until warm but not boiling. Remove from the heat.
Prepare the Custard: In a bowl, whisk the eggs, sugar, vanilla extract, and salt until combined. Gradually pour in the warm milk while whisking gently.
Strain the Mixture: Pour the custard through a fine-mesh sieve to remove any lumps and create a smooth texture.
Fill the Ramekins: Carefully pour the custard mixture over the hardened caramel.
Prepare the Water Bath: Place the ramekins in a deep baking dish. Pour hot water into the baking dish until it reaches halfway up the sides of the ramekins.
Bake: Bake in a preheated oven at 160°C (325°F) for approximately 35–45 minutes, or until the custard is set around the edges but still slightly wobbly in the center.
Cool: Remove the ramekins from the water bath and allow them to cool to room temperature.
Chill: Cover and refrigerate for at least 4 hours, preferably overnight.
Serve: Run a thin knife around the edges of each custard. Place a serving plate over the ramekin and carefully turn it upside down to release the crème caramel with its golden caramel sauce.
