Egg Fried Rice

A variety of spices, scrambled eggs, and fluffy, cooked rice are combined to create the simple yet delectable meal known as egg rice.

Ingredients
  

  • 5 cups cooked rice

  • 5 large eggs (divided)

  • ¼ teaspoon paprika

  • ¼ teaspoon turmeric

  • 3 tablespoons oil (divided)

  • 1 medium onion (finely chopped)

  • ½ red bell pepper (finely chopped)

  • 1/2 cup frozen peas (thawed)

  • 1 1/2 teaspoons salt

  • ¼ teaspoon sugar

  • ¼ teaspoon black pepper

  • 2 scallions (chopped)

Instructions
 

  • To separate and fluff the rice, use a fork. When fluffing newly cooked rice, let it sit uncovered on the counter until it has stopped steaming. You may use your hands to break up the cold rice clumps into individual grains if you choose to chill the rice overnight before making this dish.
  • In one bowl, beat three eggs. In another dish, beat the remaining two eggs, paprika, turmeric, and two tablespoons water. Set aside these two dishes.
  • In a wok set over medium-high heat, add two teaspoons of oil and heat. Scramble in three beaten eggs (omitting the seasonings). Take them out of the wok and place it aside.
  • Add the final tablespoon of oil to the wok and heat it over high heat. Add the bell pepper and onion, chopped. Fry for one to two minutes. The rice should then be added and stir-fried for two minutes, heating it evenly with a scooping motion. Any clumps of rice should be broken up and flattened out with your wok spatula. After that, cover the rice with the raw egg and spice mixture and stir-fry for approximately a minute, or until the egg has covered every grain of rice.
  • Stir-fry the peas for a further minute after adding them. After that, sprinkle the rice with the salt, sugar, and black pepper and stir. The rice should now be emitting steam, indicating that it has reached a fully cooked state.
  • Feel free to add a little water or chicken stock to the rice if it seems a bit dry. Breaking up any leftover clumps of rice can also be achieved by immediately adding some liquid to them. Stir in the onions and scrambled eggs, then serve!
