Elote is a very well Mexican street dish made of grilled corn on the cob covered in a creamy, tangy sauce, layered with crumbled cheese, and sprinkled with Tajín or chili powder.Typically served hot, it is seasoned with lime juice and occasionally cilantro.

Ingredients
  

  • 4 ears of corn (husked)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream or Mexican crema
  • 1/2 cup cotija cheese (crumbled)
  • 1 tablespoon lime juice
  • 1 teaspoon chili powder (or Tajín seasoning)
  • 1/4 cup chopped cilantro (optional)
  • Lime wedges (for serving)

Instructions
 

Grill The corn

  • Preheat grill to medium-high heat.
  • Place husked corn directly on the grill.
  • Cook for 10–12 minutes, turning occasionally, until lightly charred all over.

Prepare The sauce

  • In a bowl, mix together the mayonnaise, sour cream (or crema), lime juice, and a pinch of chili powder.

Assemble The elote

  • Once corn is grilled, brush the sauce mixture generously over each ear of corn.
  • Sprinkle crumbled cotija cheese over the top.
  • Dust with extra chili powder or Tajín to taste.
  • Garnish with chopped cilantro if desired.

Serve

  • Serve immediately with lime wedges on the side for squeezing over the top.
