Elote is a very well Mexican street dish made of grilled corn on the cob covered in a creamy, tangy sauce, layered with crumbled cheese, and sprinkled with Tajín or chili powder.Typically served hot, it is seasoned with lime juice and occasionally cilantro.

- 4 ears of corn (husked)
- 1/4 cup mayonnaise
- 1/4 cup sour cream or Mexican crema
- 1/2 cup cotija cheese (crumbled)
- 1 tablespoon lime juice
- 1 teaspoon chili powder (or Tajín seasoning)
- 1/4 cup chopped cilantro (optional)
- Lime wedges (for serving)
Grill The corn
Preheat grill to medium-high heat.
Place husked corn directly on the grill.
Cook for 10–12 minutes, turning occasionally, until lightly charred all over.
Prepare The sauce
In a bowl, mix together the mayonnaise, sour cream (or crema), lime juice, and a pinch of chili powder.
Assemble The elote
Once corn is grilled, brush the sauce mixture generously over each ear of corn.
Sprinkle crumbled cotija cheese over the top.
Dust with extra chili powder or Tajín to taste.
Garnish with chopped cilantro if desired.
