- 8 small corn or flour tortillas
- 2 cups cooked chicken (shredded) or beef (ground/cooked)
- 1 cup black beans (optional)
- 1 cup corn kernels (optional)
- 1 small onion (finely chopped)
- 2 cloves garlic (minced)
- 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
- 2 cups enchilada sauce (store-bought or homemade)
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper to taste
- Fresh cilantro (for garnish)
Prepare filling:
Heat olive oil in a skillet.
Sauté onion and garlic until soft.
Add chicken/beef, beans, corn, cumin, chili powder, salt, and pepper. Cook for 3–4 minutes.
Assemble enchiladas:
Lightly warm tortillas so they don’t crack.
Spread 2–3 tbsp of filling and a little cheese inside each tortilla.
Roll tightly and place seam-side down in a greased baking dish.
