Authentic enchilada recipe – learn how to make Mexican enchiladas with tortillas, enchilada sauce, cheese, beans, and chicken or beef.

Ingredients
  

  • 8 small corn or flour tortillas
  • 2 cups cooked chicken (shredded) or beef (ground/cooked)
  • 1 cup black beans (optional)
  • 1 cup corn kernels (optional)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 2 cups shredded cheese (cheddar, Monterey Jack, or a mix)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Fresh cilantro (for garnish)

Instructions
 

  • Preheat oven to 180°C (350°F).

Prepare filling:

  • Heat olive oil in a skillet.
  • Sauté onion and garlic until soft.
  • Add chicken/beef, beans, corn, cumin, chili powder, salt, and pepper. Cook for 3–4 minutes.

Assemble enchiladas:

  • Lightly warm tortillas so they don’t crack.
  • Spread 2–3 tbsp of filling and a little cheese inside each tortilla.
  • Roll tightly and place seam-side down in a greased baking dish.

Add Sauce & Cheese:

  • Pour enchilada sauce evenly over rolled tortillas.
  • Sprinkle remaining cheese on top.

Bake:

  • Cover with foil and bake for 20 minutes.
  • Remove foil and bake for another 10 minutes until cheese is melted and bubbly.

Serve:

  • Garnish with fresh cilantro, sour cream, or avocado slices.
