- 3 cups 270 g old-fashioned rolled oats
- 1 cup 100 g chopped almonds or mixed nuts
- ½ cup 40 g unsweetened shredded coconut (optional)
- ¼ cup 30 g pumpkin seeds or sunflower seeds
- ⅓ cup 80 ml honey or maple syrup
- ¼ cup 60 ml coconut oil or olive oil, melted
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- ¼ teaspoon salt
- ½ cup 70 g raisins or dried cranberries (optional)
Preheat the oven: Preheat your oven to 325°F (165°C). Line a large baking tray with parchment paper.
Mix the dry ingredients: In a large bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, cinnamon, and salt.
Prepare the sweetener: In a separate bowl, mix the honey or maple syrup with the melted coconut oil and vanilla extract until well combined.
Combine everything: Pour the honey mixture over the oat mixture. Stir thoroughly until the oats and nuts are evenly coated.
Spread on the tray: Transfer the granola mixture to the prepared baking tray and spread it into an even layer.
Bake the granola: Bake for 20–25 minutes, stirring gently halfway through, until lightly golden. Watch carefully near the end to prevent burning.
Let it cool: Remove the tray from the oven and allow the granola to cool completely without stirring too much. It will become crisp as it cools.
Add dried fruit: Once completely cool, mix in the raisins or dried cranberries, if using.
Store and serve: Store the homemade granola in an airtight container. Serve with milk, yogurt, fresh fruit, or enjoy it as a crunchy snack.
Tip: For extra crunchy granola clusters, press the mixture gently into the baking tray before baking and avoid stirring it too much.
