For The Chicken
- 500 g boneless chicken thighs or chicken wings
- ½ cup all-purpose flour
- ½ cup cornstarch
- 1 tsp baking powder
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ cup cold water
- Oil for frying
For The Korean Sauce
- 2 tbsp gochujang
- 2 tbsp honey
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp brown sugar
- 2 cloves garlic minced
- 1 tsp sesame oil
- 1 tsp grated fresh ginger
- 2 tbsp water
For Garnishing
- 1 tbsp sesame seeds
- 2 tbsp chopped spring onions
Prepare the chicken: Cut the chicken into bite-sized pieces. Pat them dry and season with salt, black pepper, and garlic powder.
Make the coating: In a bowl, combine flour, cornstarch, and baking powder. Add cold water and mix until you have a light, slightly thick batter.
Coat the chicken: Add the chicken pieces to the batter and mix until each piece is evenly coated.
Heat the oil: Heat enough oil in a deep pan to safely fry the chicken. The oil should be hot before adding the chicken.
First fry: Carefully add the chicken pieces in batches. Fry until lightly golden and cooked through, about 5–7 minutes depending on their size. Remove and drain on a wire rack or paper towels.
Make the sauce: Add gochujang, honey, soy sauce, rice vinegar, brown sugar, garlic, ginger, sesame oil, and water to a pan. Cook over low-medium heat for 2–3 minutes, stirring until the sauce becomes smooth and slightly thick.
Second fry: Fry the chicken pieces again for a few minutes until golden and crispy. Frying twice helps create the characteristic crunchy texture.
Coat with sauce: Add the crispy chicken to the warm sauce and toss gently until evenly coated.
Garnish: Sprinkle with sesame seeds and chopped spring onions.
Serve: Serve the Korean Fried Chicken immediately while it is hot and crispy.
