Ingredients
  

Vegetables

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 potato, diced
  • 1 cup zucchini, chopped
  • 1 cup tomatoes (fresh chopped or canned)
  • 1 cup green beans, chopped

Beans & Pasta

  • 1 cup cooked beans (kidney beans, cannellini, or chickpeas)
  • ½ cup small pasta (elbow, ditalini, or shells)

Liquids & Seasoning

  • 6 cups vegetable broth (or water)
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and black pepper to taste
  • 1 bay leaf (optional)

Optional

  • 1 cup spinach or cabbage, chopped
  • Grated Parmesan cheese (for serving)

Instructions
 

Heat The Oil

  • Heat olive oil in a large pot over medium heat.

Sauté Aromatics

  • Add onion and garlic. Cook for 2–3 minutes until fragrant and soft.

Add Vegetables

  • Stir in carrot, celery, potato, zucchini, and green beans. Cook for 5 minutes.

Add Tomatoes & Seasoning

  • Add tomatoes, oregano, basil, bay leaf, salt, and pepper. Mix well.

Pour In Broth

  • Add vegetable broth and bring to a gentle boil.

Simmer

  • Reduce heat and simmer for 15–20 minutes until vegetables are tender.

Add Beans & Pasta

  • Stir in beans and pasta. Cook for another 8–10 minutes until pasta is soft.

Add Greens

  • Add spinach or cabbage (if using) and cook for 2 more minutes.

Taste & Serve

  • Adjust seasoning, remove bay leaf, and serve hot with Parmesan cheese.
