- 2 tbsp olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 potato, diced
- 1 cup zucchini, chopped
- 1 cup tomatoes (fresh chopped or canned)
- 1 cup green beans, chopped
Beans & Pasta
- 1 cup cooked beans (kidney beans, cannellini, or chickpeas)
- ½ cup small pasta (elbow, ditalini, or shells)
Liquids & Seasoning
- 6 cups vegetable broth (or water)
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and black pepper to taste
- 1 bay leaf (optional)
Optional
- 1 cup spinach or cabbage, chopped
- Grated Parmesan cheese (for serving)
Add Vegetables
Stir in carrot, celery, potato, zucchini, and green beans. Cook for 5 minutes.
Add Tomatoes & Seasoning
Add tomatoes, oregano, basil, bay leaf, salt, and pepper. Mix well.
