Easy homemade onion soup recipe with caramelized onions, beef broth, garlic, herbs, and cheesy toasted bread. Classic French onion soup that’s flavorful, comforting, and perfect for weeknight dinners.

Ingredients
  

  • 4 large onions thinly sliced
  • 3 tablespoons butter
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 teaspoon sugar optional, helps caramelize
  • 1 tablespoon flour optional, for thicker soup
  • 6 cups beef broth or vegetable broth
  • ½ cup white wine optional
  • 1 bay leaf
  • 1 teaspoon thyme fresh or dried
  • Salt and pepper to taste
  • Baguette slices for topping
  • Grated Gruyère or mozzarella cheese for topping

Instructions
 

Caramelize The Onions

  • Heat butter and olive oil in a large pot over medium heat.
  • Add sliced onions and cook slowly for 25–30 minutes until golden brown.
  • Add sugar to help caramelize if desired.

Add Garlic & Flour

  • Stir in minced garlic and cook for 1 minute.
  • Add flour and mix well (optional for thicker soup).

Deglaze The Pot

  • Pour in white wine and scrape the bottom to release flavors.
  • Let it simmer for 2–3 minutes.

Add Broth & Herbs

  • Add beef broth, bay leaf, thyme, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.

Prepare Cheese Topping

  • Toast baguette slices.
  • Top each with grated cheese.

Serve

  • Ladle hot onion soup into bowls.
  • Place the cheesy toast on top and let the cheese melt (broil if you want a bubbling top).
