- 4 large onions thinly sliced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 teaspoon sugar optional, helps caramelize
- 1 tablespoon flour optional, for thicker soup
- 6 cups beef broth or vegetable broth
- ½ cup white wine optional
- 1 bay leaf
- 1 teaspoon thyme fresh or dried
- Salt and pepper to taste
- Baguette slices for topping
- Grated Gruyère or mozzarella cheese for topping
Caramelize The Onions
Heat butter and olive oil in a large pot over medium heat.
Add sliced onions and cook slowly for 25–30 minutes until golden brown.
Add sugar to help caramelize if desired.
Add Broth & Herbs
Add beef broth, bay leaf, thyme, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 20 minutes.
