Ingredients
  

  • 2 cups (500 ml) heavy cream
  • 1/2 cup (100 g) sugar
  • 1 tsp vanilla extract (or 1 vanilla bean, split and scraped)
  • 2 1/2 tsp (1 packet) powdered gelatin
  • 3 tbsp cold water
  • Fresh berries or fruit coulis (for topping)

Instructions
 

  • In a small bowl, sprinkle gelatin over cold water and let it bloom (soften) for about 5–10 minutes.
  • In a saucepan, heat heavy cream and sugar over medium heat. Stir until sugar dissolves and the mixture is hot, but not boiling.
  • Remove from heat. Stir in vanilla.
  • Add the softened gelatin to the hot cream mixture and whisk until fully dissolved.
  • Pour the mixture into ramekins, glasses, or molds.
  • Refrigerate for at least 4–6 hours, or until set.
  • To serve, unmold (if desired) or serve directly in glasses. Top with fresh berries, caramel, or fruit coulis.
