- 2 cups (500 ml) heavy cream
- 1/2 cup (100 g) sugar
- 1 tsp vanilla extract (or 1 vanilla bean, split and scraped)
- 2 1/2 tsp (1 packet) powdered gelatin
- 3 tbsp cold water
- Fresh berries or fruit coulis (for topping)
In a small bowl, sprinkle gelatin over cold water and let it bloom (soften) for about 5–10 minutes.
In a saucepan, heat heavy cream and sugar over medium heat. Stir until sugar dissolves and the mixture is hot, but not boiling.
Remove from heat. Stir in vanilla.
Add the softened gelatin to the hot cream mixture and whisk until fully dissolved.
Pour the mixture into ramekins, glasses, or molds.
Refrigerate for at least 4–6 hours, or until set.
To serve, unmold (if desired) or serve directly in glasses. Top with fresh berries, caramel, or fruit coulis.
