- 2 tbsp olive oil
- 1 medium onion, finely chopped
- 3 garlic cloves, minced
- 1 can (400g) crushed tomatoes (or fresh tomatoes, peeled & blended)
- 2 tbsp tomato paste
- 1 tsp sugar (optional, to balance acidity)
- 1 tsp dried oregano
- 1 tsp dried basil (or a few fresh basil leaves)
- ½ tsp red chili flakes (optional, for heat)
- Salt and black pepper, to taste
- Fresh parsley or basil, chopped (for garnish)
Heat oil in a pan over medium heat.
Sauté onion until soft and translucent, about 5 minutes
Add garlic and cook for 1 minute, stirring to avoid burning.
Stir in tomato paste and cook for 2 minutes to deepen flavor.
Add crushed tomatoes, sugar, herbs, chili flakes, salt, and pepper. Mix well.
Simmer uncovered for 15–20 minutes, stirring occasionally, until sauce thickens.
Taste and adjust seasoning. Add more herbs or a drizzle of olive oil for richness.
Serve hot over cooked pasta, and garnish with fresh parsley or basil.
