Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can (400g) crushed tomatoes (or fresh tomatoes, peeled & blended)
  • 2 tbsp tomato paste
  • 1 tsp sugar (optional, to balance acidity)
  • 1 tsp dried oregano
  • 1 tsp dried basil (or a few fresh basil leaves)
  • ½ tsp red chili flakes (optional, for heat)
  • Salt and black pepper, to taste
  • Fresh parsley or basil, chopped (for garnish)

Instructions
 

  • Heat oil in a pan over medium heat.
  • Sauté onion until soft and translucent, about 5 minutes
  • Add garlic and cook for 1 minute, stirring to avoid burning.
  • Stir in tomato paste and cook for 2 minutes to deepen flavor.
  • Add crushed tomatoes, sugar, herbs, chili flakes, salt, and pepper. Mix well.
  • Simmer uncovered for 15–20 minutes, stirring occasionally, until sauce thickens.
  • Taste and adjust seasoning. Add more herbs or a drizzle of olive oil for richness.
  • Serve hot over cooked pasta, and garnish with fresh parsley or basil.
