- 2 ½ cups all-purpose flour
- 1 cup unsalted butter (cold, cubed)
- 1 tsp salt
- 2–4 tbsp cold water
- Pie filling of choice (apple, pumpkin, meat, etc.)
Make the crust Mix flour, salt, and butter until coarse crumbs form. Add cold water gradually until dough comes together. Chill Divide dough in half, wrap, and refrigerate 1 hour. Roll & assemble Roll out one half for the base, place in a pie dish, add filling, and cover with second rolled dough or lattice strips. Seal & vent Pinch edges and cut slits for steam to escape. Bake Brush with egg wash and bake at 190°C (375°F) for 40–50 minutes until golden brown. Cool Let rest before slicing to set the filling.
