Ingredients
  

  • 1 kg (2.2 lbs) potatoes (waxy variety like Yukon Gold or red potatoes)
  • 1/2 cup mayonnaise
  • 2 tablespoons mustard (Dijon or yellow, to taste)
  • 1/4 cup chopped red onion or green onions
  • 2 celery stalks, finely chopped
  • 3 hard-boiled eggs, chopped (optional)
  • 2 tablespoons apple cider vinegar or lemon juice
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh dill or parsley, chopped (optional)
  • Paprika for garnish (optional)

Instructions
 

Cook The Potatoes

  • Peel (if desired) and cut the potatoes into bite-sized chunks.
  • Place in a large pot, cover with cold salted water, and bring to a boil.
  • Cook until tender but not mushy (about 10–15 minutes). Drain and let cool.

Prepare The Dressing

  • In a large mixing bowl, combine mayonnaise, mustard, vinegar (or lemon juice), salt, pepper, and chopped herbs if using.

Mix The Salad

  • Add the cooled potatoes, chopped celery, onion, and eggs to the bowl with the dressing.
  • Gently toss everything together until well coated.

Chill And Serve

  • Cover and refrigerate for at least 1 hour before serving for best flavor.
  • Garnish with a sprinkle of paprika or fresh herbs if desired.
