Ingredients
  

  • 4 large potatoes (peeled and diced)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 3 cups chicken or vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour (optional, for thickening)
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese (optional, for topping)
  • 2 tablespoons chopped green onions or chives (for garnish)
  • 2 slices cooked bacon (crumbled, optional)

Instructions
 

Prepare The Vegetables:

  • Peel and dice the potatoes, then chop the onion and garlic.

Cook The Base:

  • In a large pot, melt the butter over medium heat. Add the onion and garlic, sauté until soft and fragrant (about 3–4 minutes).

Add Potatoes And Broth:

  • Add diced potatoes and pour in the broth. Bring to a boil, then reduce the heat and simmer for about 15–20 minutes, or until the potatoes are tender.

Mash Or Blend:

  • Use a potato masher for a chunky texture or an immersion blender for a smooth soup.

Add Milk And Seasonings:

  • Stir in the milk (or cream), salt, and pepper. If you want a thicker soup, mix the flour with a little milk before adding it to the pot. Simmer for another 5–7 minutes.

Adjust Consistency:

  • If the soup is too thick, add a little extra broth or milk until you reach your preferred texture.

Serve:

  • Ladle the soup into bowls. Top with shredded cheese, crumbled bacon, and chopped green onions.
