Ingredients

  • 4 large flour tortillas
  • 2 cups 200 g shredded cheddar cheese or Mexican cheese blend
  • 1 cup cooked chicken breast shredded (optional)
  • ½ cup bell peppers thinly sliced
  • ¼ cup red onion finely chopped
  • 1 tablespoon olive oil or butter
  • ½ teaspoon paprika
  • ½ teaspoon ground cumin
  • ¼ teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Optional Toppings:

  • Sour cream
  • Fresh salsa
  • Guacamole
  • Chopped fresh cilantro
  • Sliced jalapeños

Instructions

  • Prepare the Ingredients: Slice the bell peppers, finely chop the red onion, and shred the cooked chicken if using.
  • Season the Filling: In a bowl, combine the chicken, bell peppers, onion, paprika, cumin, garlic powder, salt, and black pepper.
  • Heat the Pan: Heat a large skillet over medium heat and lightly grease it with olive oil or butter.
  • Add the Tortilla: Place one flour tortilla in the warm skillet.
  • Add the Filling: Sprinkle shredded cheese over half of the tortilla. Add the prepared chicken and vegetable mixture, then top with another layer of cheese.
  • Fold the Tortilla: Fold the empty half over the filling to create a half-moon shape. Gently press with a spatula.
  • Cook Until Golden: Cook for 2–3 minutes on each side until the tortilla is golden brown and the cheese has melted.
  • Repeat: Remove from the pan and repeat with the remaining tortillas and filling.
  • Slice and Serve: Allow each quesadilla to rest briefly, then cut into wedges. Serve warm with salsa, sour cream, or guacamole.
  • Pro Tip: Avoid adding too much filling, as this makes the quesadillas difficult to fold and cook evenly. Use medium heat for a crispy tortilla and perfectly melted cheese.
