- 1 ½ cups all-purpose flour
- ½ cup unsalted butter (cold, cut into cubes)
- ¼ cup granulated sugar
- 1 egg yolk
- 2–3 tbsp cold water
- ½ cup raspberry jam
- 2 cups fresh raspberries
- 2 tbsp powdered sugar (for dusting)
- (Optional) Whipped cream or vanilla ice cream for serving
Prepare The Tart Crust
In a bowl, combine flour, butter, and sugar.
Rub with fingers (or use a food processor) until mixture resembles breadcrumbs.
Add egg yolk and water, mix until dough forms.
Wrap in plastic wrap and chill for 30 minutes.
Bake The Crust
Preheat oven to 180°C (350°F).
Roll dough and press into a tart pan. Prick the base with a fork.
Line with parchment paper and add pie weights or beans.
Bake for 15 minutes, remove weights, then bake another 10 minutes until golden. Let cool.
