For The Pasta Dough:
- 2 cups all-purpose flour (plus extra for dusting)
- 3 large eggs
- 1 tbsp olive oil
- ½ tsp salt
For The Filling (Classic Ricotta-Spinach):
- 1 cup ricotta cheese
- ½ cup grated Parmesan cheese
- 1 cup spinach (blanched, drained, and finely chopped)
- 1 egg yolk
- Salt & pepper to taste
- A pinch of nutmeg (optional)
For Cooking & Serving:
- Salt (for boiling water)
- 2 tbsp butter (for sauce)
- Fresh sage or basil (optional)
- Extra grated Parmesan for topping
Step 1: Make The Pasta Dough
On a clean surface, make a mound with the flour and create a well in the center.
Add eggs, olive oil, and salt into the well.
Slowly mix the flour into the wet ingredients with a fork, then knead until smooth (8–10 minutes).
Wrap in plastic wrap and let rest for at least 30 minutes.
Step 2: Prepare The Filling
In a bowl, mix ricotta, Parmesan, spinach, egg yolk, salt, pepper, and nutmeg until creamy.
Keep chilled until ready to use.
Step 3: Roll & Fill The Ravioli
Roll out the pasta dough thinly using a rolling pin or pasta machine.
Place small spoonfuls of filling about 1 inch apart on one sheet of dough.
Brush edges lightly with water or egg wash.
Place another sheet of dough on top, press around filling to seal, and cut into squares or circles.
Press edges with a fork to prevent opening during cooking.
Step 4: Cook The Ravioli
Bring a large pot of salted water to a boil.
Drop ravioli in batches and cook for 3–4 minutes, until they float to the top.
Remove with a slotted spoon.
Step 5: Serve
Toss with melted butter and sage, or serve with marinara, pesto, or cream sauce.
Sprinkle with Parmesan before serving.
