  • 3 large eggs
  • 1 tbsp olive oil
  • ½ tsp salt

For The Filling (Classic Ricotta-Spinach):

  • 1 cup ricotta cheese
  • ½ cup grated Parmesan cheese
  • 1 cup spinach (blanched, drained, and finely chopped)
  • 1 egg yolk
  • Salt & pepper to taste
  • A pinch of nutmeg (optional)

For Cooking & Serving:

  • Salt (for boiling water)
  • 2 tbsp butter (for sauce)
  • Fresh sage or basil (optional)
  • Extra grated Parmesan for topping

Instructions

Step 1: Make The Pasta Dough

  • On a clean surface, make a mound with the flour and create a well in the center.
  • Add eggs, olive oil, and salt into the well.
  • Slowly mix the flour into the wet ingredients with a fork, then knead until smooth (8–10 minutes).
  • Wrap in plastic wrap and let rest for at least 30 minutes.

Step 2: Prepare The Filling

  • In a bowl, mix ricotta, Parmesan, spinach, egg yolk, salt, pepper, and nutmeg until creamy.
  • Keep chilled until ready to use.

Step 3: Roll & Fill The Ravioli

  • Roll out the pasta dough thinly using a rolling pin or pasta machine.
  • Place small spoonfuls of filling about 1 inch apart on one sheet of dough.
  • Brush edges lightly with water or egg wash.
  • Place another sheet of dough on top, press around filling to seal, and cut into squares or circles.
  • Press edges with a fork to prevent opening during cooking.

Step 4: Cook The Ravioli

  • Bring a large pot of salted water to a boil.
  • Drop ravioli in batches and cook for 3–4 minutes, until they float to the top.
  • Remove with a slotted spoon.

Step 5: Serve

  • Toss with melted butter and sage, or serve with marinara, pesto, or cream sauce.
  • Sprinkle with Parmesan before serving.
