Ingredients
  

  • 1 ½ cups Arborio rice (or any risotto rice)
  • 4 cups chicken broth or vegetable broth (kept warm)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • ½ cup dry white wine (optional)
  • ½ cup grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste

Instructions
 

Heat The Broth:

  • In Aa small pot, warm the broth over low heat. Keep it hot but not boiling.

Sauté Onion And Garlic:

  • In a large pan, heat olive oil and 1 tablespoon butter over medium heat.
  • Add chopped onion and sauté for 3–4 minutes until soft.
  • Add garlic and cook for 1 more minute.

Toast The Rice:

  • Add Arborio rice to the pan and stir for about 2 minutes until the grains are lightly coated and slightly translucent around the edges.

Add Wine (Optional):

  • Pour in the white wine and cook until it is mostly absorbed by the rice.

Add Broth Slowly:

  • Add ½ cup of warm broth to the rice and stir gently.
  • When the liquid is almost absorbed, add another ½ cup.
  • Continue this process—slowly adding broth and stirring—until the rice is creamy and tender, about 18–22 minutes.

Finish The Risotto:

  • Once creamy, turn off the heat.
  • Stir in remaining butter and Parmesan cheese.
  • Season with salt and black pepper.

Serve Warm:

  • Serve immediately while creamy and rich.
