For The Scallops
- 500 g large sea scallops
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 2 tbsp unsalted butter
- 3 cloves garlic minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley chopped
For Serving
- Lemon wedges
- Fresh parsley optional
Pat the scallops very dry with paper towels. Remove the small side muscle from each scallop if it is still attached.
Season both sides of the scallops with salt and black pepper.
Heat the olive oil in a large skillet over medium-high heat until hot.
Carefully place the scallops in the skillet, leaving space between each one.
Sear for about 2–3 minutes on the first side without moving them, until a deep golden crust forms.
Turn the scallops and cook for another 1–2 minutes until lightly golden and cooked through.
Reduce the heat to medium and add the butter and minced garlic.
Spoon the melted garlic butter over the scallops for about 30–60 seconds.
Add the lemon juice and lemon zest, gently swirling the pan to combine the flavors.
Remove the scallops from the heat and sprinkle with fresh parsley.
Serve immediately with lemon wedges, rice, pasta, mashed potatoes, or vegetables.
