Authentic Shrimp Ceviche recipe made with fresh shrimp, lime juice, coriander, tomato, and chili. A healthy, low-calorie seafood appetizer.

Ingredients
  

  • 500g shrimp (small or medium), peeled and deveined
  • 1 cup fresh lime juice (enough to fully submerge shrimp)
  • 1 medium red onion, finely chopped
  • 2 medium tomatoes, diced
  • 1 small cucumber, diced (optional)
  • 1–2 fresh jalapeños or green chilies, finely sliced
  • 1/2 cup fresh coriander leaves, chopped
  • 1 ripe avocado, diced (optional but recommended)
  • Salt to taste
  • Black pepper to taste
  • 1–2 tbsp olive oil (optional for smoother flavor)

Instructions
 

Prepare The Shrimp

  • If using raw shrimp, chop into bite-sized pieces and place in a bowl.
  • Pour in enough lime juice to fully cover the shrimp.
  • Cover and refrigerate for 30–45 minutes, or until the shrimp turns opaque and firm.
  • If pre-cooked shrimp: Skip to step 2 and simply marinate the shrimp for 10–15 minutes instead.

Drain Excess Lime Juice

  • Once the shrimp is “cooked” from the citrus, drain about half of the lime juice.

Add Vegetables & Seasoning

  • Mix in the chopped red onion, tomatoes, cucumber, jalapeño, coriander, and avocado.

Season

  • Add salt, pepper, and olive oil (optional). Mix gently to avoid crushing the avocado.

Chill & Serve

  • Cover and refrigerate for at least 10 minutes before serving to let flavors combine
  • Serve With:
  • Tortilla chips
  • Lettuce cups
  • On toasted bread
  • Or as-is!
