- 500 g fresh squid (cleaned, cut into rings or strips)
- 2 tbsp vegetable oil (or sesame oil)
- 3 garlic cloves (minced)
- 1 medium onion (sliced)
- 1–2 green chilies (optional, sliced)
- 1 cup mixed vegetables (carrot, bell pepper, broccoli, beans – optional)
- 1 tbsp soy sauce
- 1 tbsp oyster sauce (optional)
- ½ tsp turmeric powder
- ½ tsp black pepper
- ½ tsp chili flakes or paprika
- Salt to taste
- Spring onions or fresh coriander (for garnish)
- Lemon wedges (to serve)
Prepare squid Clean and wash squid thoroughly. Slice into rings or strips and pat dry. Heat oil In a wok or pan, heat oil on medium-high. Sauté aromatics Add garlic, onion, and chilies. Stir-fry until fragrant. Cook squid Add squid pieces, stir-fry quickly for 2–3 minutes (avoid overcooking to prevent toughness). Add vegetables Toss in carrots, bell peppers, or broccoli (if using). Stir-fry for another 2 minutes. Season Add soy sauce, oyster sauce, turmeric, chili flakes, and black pepper. Stir well to coat. Adjust taste Add salt if needed. If you like more sauce, splash in a little water or broth. Finish & serve Garnish with chopped spring onions or coriander. Serve hot with steamed rice or noodles.
