  • 2 tbsp vegetable oil (or sesame oil)
  • 3 garlic cloves (minced)
  • 1 medium onion (sliced)
  • 1–2 green chilies (optional, sliced)
  • 1 cup mixed vegetables (carrot, bell pepper, broccoli, beans – optional)
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce (optional)
  • ½ tsp turmeric powder
  • ½ tsp black pepper
  • ½ tsp chili flakes or paprika
  • Salt to taste
  • Spring onions or fresh coriander (for garnish)
  • Lemon wedges (to serve)

Instructions

  • Prepare squid
Clean and wash squid thoroughly. Slice into rings or strips and pat dry.
  • Heat oil
In a wok or pan, heat oil on medium-high.
  • Sauté aromatics
Add garlic, onion, and chilies. Stir-fry until fragrant.
  • Cook squid
Add squid pieces, stir-fry quickly for 2–3 minutes (avoid overcooking to prevent toughness).
  • Add vegetables
Toss in carrots, bell peppers, or broccoli (if using). Stir-fry for another 2 minutes.
  • Season
Add soy sauce, oyster sauce, turmeric, chili flakes, and black pepper. Stir well to coat.
  • Adjust taste
Add salt if needed. If you like more sauce, splash in a little water or broth.
  • Finish & serve
Garnish with chopped spring onions or coriander. Serve hot with steamed rice or noodles.
