This cake is known for its fresh, fruity flavor and is especially popular in spring and summer when strawberries are in season. It can be served plain, with whipped cream, or frosted with strawberry buttercream or cream cheese frosting

Ingredients
  

For The Cake

  • 1 ½ cups (190g) all-purpose flour
  • 1 ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 2 large eggs
  • ½ cup (120ml) milk
  • 1 tsp vanilla extract
  • 1 cup (150g) fresh strawberries, chopped
  • Optional: a few drops of pink or red food coloring (for a more vibrant color)

For The Strawberry Frosting (optional)

  • ½ cup (113g) unsalted butter, softened
  • 2 cups (240g) powdered sugar
  • ¼ cup (60g) strawberry puree (blended fresh strawberries)
  • 1 tsp vanilla extract
  • Pinch of salt

Instructions
 

Preheat Oven & Prepare Pans

  • Preheat your oven to 350°F (175°C).
  • Grease and flour a 9-inch round cake pan or line it with parchment paper.

Mix Dry Ingredients

  • In a medium bowl, whisk together the flour, baking powder, and salt.

Cream Butter And Sugar

  • In a large mixing bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).

Add Eggs And Vanilla

  • Beat in the eggs one at a time, then mix in the vanilla extract.

Combine Wet And Dry

  • Add half of the dry ingredients to the butter mixture, then add the milk, followed by the rest of the dry ingredients. Mix just until combined.

Add Strawberries

  • Gently fold in the chopped strawberries. Add food coloring if desired.

Bake

  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool the cake in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Make The Frosting (Optional)

  • Beat butter until creamy.
  • Add powdered sugar gradually, then mix in the strawberry puree, vanilla, and salt.
  • Beat until smooth and fluffy.

Assemble And Frost

  • Once the cake is completely cool, frost the top (and sides if desired) with the strawberry frosting.
