Ingredients
For The Strawberries:
2 cups fresh strawberries, hulled and sliced
3 tablespoons granulated sugar
For The Shortcake Biscuits:
2 cups all-purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1/4 cup granulated sugar
1/2 cup cold unsalted butter, cut into cubes
2/3 cup whole milk (or heavy cream)
1 teaspoon vanilla extract
For The Whipped Cream:
1 cup heavy whipping cream
2 tablespoons powdered sugar
1 teaspoon vanilla extract
Instructions
Step 1: Prepare The Strawberries
In a bowl, combine the sliced strawberries and 3 tbsp sugar.
Mix well and let sit for 30 minutes to macerate (they’ll become juicy and sweet).
Step 2: Make The Shortcake Biscuits
Preheat your oven to
425°F (220°C)
.
In a large bowl, whisk together flour, baking powder, salt, and sugar.
Add cold butter cubes and cut into the flour using a pastry cutter or fingers until the mixture resembles coarse crumbs.
Stir in milk and vanilla until just combined — do not overmix.
Drop spoonfuls of dough (or shape rounds) onto a baking sheet lined with parchment paper.
Bake for
12–15 minutes
or until golden brown. Cool slightly on a rack.
Step 3: Make Whipped Cream
In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until
soft peaks
form.
Keep chilled until ready to use.
Step 4: Assemble The Shortcakes
Slice each shortcake biscuit in half horizontally.
Spoon strawberries (with juice) onto the bottom half.
Add a generous dollop of whipped cream.
Top with the other biscuit half and more strawberries and cream if desired.
