Ingredients
  

For The Strawberries:

  • 2 cups fresh strawberries, hulled and sliced
  • 3 tablespoons granulated sugar

For The Shortcake Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter, cut into cubes
  • 2/3 cup whole milk (or heavy cream)
  • 1 teaspoon vanilla extract

For The Whipped Cream:

  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Instructions
 

Step 1: Prepare The Strawberries

  • In a bowl, combine the sliced strawberries and 3 tbsp sugar.
  • Mix well and let sit for 30 minutes to macerate (they’ll become juicy and sweet).

Step 2: Make The Shortcake Biscuits

  • Preheat your oven to 425°F (220°C).
  • In a large bowl, whisk together flour, baking powder, salt, and sugar.
  • Add cold butter cubes and cut into the flour using a pastry cutter or fingers until the mixture resembles coarse crumbs.
  • Stir in milk and vanilla until just combined — do not overmix.
  • Drop spoonfuls of dough (or shape rounds) onto a baking sheet lined with parchment paper.
  • Bake for 12–15 minutes or until golden brown. Cool slightly on a rack.

Step 3: Make Whipped Cream

  • In a chilled bowl, beat the heavy cream, powdered sugar, and vanilla until soft peaks form.
  • Keep chilled until ready to use.

Step 4: Assemble The Shortcakes

  • Slice each shortcake biscuit in half horizontally.
  • Spoon strawberries (with juice) onto the bottom half.
  • Add a generous dollop of whipped cream.
  • Top with the other biscuit half and more strawberries and cream if desired.
