- 2 lbs (900 g) beef chuck, cut into 1-inch cubes
- 2 tbsp vegetable oil
- 1 large onion, chopped
- 4 cloves garlic, minced
- 3 tbsp chili powder
- 2 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 1 tsp salt (adjust to taste)
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper (optional, for heat)
- 2 tbsp tomato paste
- 2 cups beef broth
- 1 (14 oz) can crushed tomatoes
- 1 (4 oz) can diced green chilies (optional)
- 1 tbsp masa harina (corn flour) or all-purpose flour (for thickening)
- Fresh cilantro, chopped (for garnish)
Add Spices:
Add chili powder, cumin, paprika, oregano, salt, black pepper, and cayenne. Stir well for 30 seconds to release the flavors.
Simmer:
Return the browned beef to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 1½ to 2 hours, stirring occasionally, until beef is tender.
