Ingredients
  

  • 1 tablespoon olive oil or butter
  • 1 medium onion, chopped
  • 2–3 garlic cloves, minced
  • 4–5 large ripe tomatoes (or 1 can of whole peeled tomatoes – about 400g)
  • 1 cup vegetable or chicken broth
  • 1 teaspoon sugar (optional, to balance acidity)
  • Salt and black pepper to taste
  • 1/4 teaspoon dried basil or a few fresh basil leaves (optional)
  • 1/4 cup heavy cream or milk (optional, for creamy texture)

Instructions
 

Heat The Oil

  • In a large pot, heat the olive oil or butter over medium heat.

Sauté Aromatics

  • Add chopped onion and sauté until soft and translucent (about 5 minutes). Add garlic and cook for 1 minute, until fragrant.

Add Tomatoes

  • Stir in chopped fresh tomatoes (or canned tomatoes). Cook for 5–7 minutes, stirring occasionally, until they begin to break down.

Add Broth And Seasonings

  • Pour in the broth, add sugar (if using), salt, pepper, and basil. Bring to a boil, then reduce heat and simmer for 15–20 minutes.

Blend The Soup

  • Use an immersion blender directly in the pot, or transfer the soup to a blender (in batches if necessary) and puree until smooth.

Make It Creamy (Optional)

  • Return the soup to the pot (if blended externally) and stir in cream or milk. Heat gently without boiling.

Taste And Adjust

  • Add more salt, pepper, or sugar to taste if needed.

Serve Hot

  • Garnish with croutons, a swirl of cream, or chopped basil if desired. Enjoy with toasted bread or a grilled cheese sandwich!
