Ingredients
  

  • 1 package (about 10–12 oz) refrigerated or frozen cheese tortellini
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach (optional)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or parsley (for garnish)
  • Optional: cream or pesto for sauce

Instructions
 

Cook The Tortellini

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to the package instructions (usually 3–5 minutes). Drain and set aside.

Sauté The Garlic & Tomatoes

  • In a large skillet, heat olive oil over medium heat. Add the minced garlic and cook for 30 seconds until fragrant. Add the cherry tomatoes and cook for 3–4 minutes until they begin to soften.

Add Spinach (Optional)

  • Stir in the spinach and cook for another 1–2 minutes until wilted.

Combine With Tortellini

  • Add the cooked tortellini to the skillet. Toss gently to combine. Season with salt and pepper.

Finish And Serve

  • Sprinkle with Parmesan cheese and garnish with fresh basil or parsley. Serve warm.
