- 1 cup green beans, trimmed and chopped
- 1 can (14.5 oz) diced tomatoes
- 6 cups vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper, to taste
- 1 cup frozen peas or corn (optional)
- Fresh parsley, for garnish
Simmer The Soup
Add zucchini, green beans, diced tomatoes (with juice), vegetable broth, basil, oregano, salt, and pepper. Bring to a boil.
