Yellow Rice

Yellow rice is a popular food in many cultures. Arros Amarlo, a staple of Latin American kitchens, is spread in different ways throughout the region and appears in various legends from the past.

Ingredients
  

  • 1 Tbsp olive oil
  • ½ cup onion, diced
  • ½ cup carrots, diced
  • 2 cups long grain rice (white basmati is my favorite)
  • ¼ tsp ground turmeric
  • ¼ tsp salt
  • 3 ½ cups broth or water
  • 1 cup frozen peas, defrosted

Instructions
 

  • Fill a medium saucepan with oil and turn the heat up to medium-high. Once heated, add the onions and carrots and simmer over low heat for about 4–5 minutes, or until the vegetables are tender and transparent.
  • Add the ground turmeric mixture and stir.
  • To coat, add the rice and toss.
  • Add water or broth to the rice after it has been coated with the oil and spice mixture.
  • After bringing the rice to a boil, lower the heat to medium-low and simmer it covered for about 20 minutes, following the directions on the box. While doing this, don't stir the rice. Allow it to function without interference.
  • After the rice is finished, remove from the fire and add the peas. Cover the rice and steam the peas for about 8 minutes to preserve their beautiful color.
  • Before serving, take off the cover and fluff the yellow rice.
  • To taste, add salt. Cheers to your eating! Becky
