Yellow Rice

Yellow rice is a popular food in many cultures. Arros Amarlo, a staple of Latin American kitchens, is spread in different ways throughout the region and appears in various legends from the past.

- 1 Tbsp olive oil
- ½ cup onion, diced
- ½ cup carrots, diced
- 2 cups long grain rice (white basmati is my favorite)
- ¼ tsp ground turmeric
- ¼ tsp salt
- 3 ½ cups broth or water
- 1 cup frozen peas, defrosted
Fill a medium saucepan with oil and turn the heat up to medium-high. Once heated, add the onions and carrots and simmer over low heat for about 4–5 minutes, or until the vegetables are tender and transparent.
Add the ground turmeric mixture and stir.
To coat, add the rice and toss.
Add water or broth to the rice after it has been coated with the oil and spice mixture.
After bringing the rice to a boil, lower the heat to medium-low and simmer it covered for about 20 minutes, following the directions on the box. While doing this, don't stir the rice. Allow it to function without interference.
After the rice is finished, remove from the fire and add the peas. Cover the rice and steam the peas for about 8 minutes to preserve their beautiful color.
Before serving, take off the cover and fluff the yellow rice.
