  • 2 tbsp vegetable oil
  • 2–3 tbsp Massaman curry paste (store-bought or homemade)
  • 500 g (1 lb) beef, chicken, or lamb (cut into bite-sized pieces)
  • 400 ml (1 can) coconut milk
  • 1 cup water or beef/chicken stock
  • 2 medium potatoes (peeled and cubed)
  • 1 onion (cut into wedges)
  • ½ cup roasted peanuts (unsalted)
  • 2 tbsp tamarind paste (or 1 tbsp lime juice)
  • 2 tbsp fish sauce
  • 1–2 tbsp palm sugar or brown sugar
  • 1 cinnamon stick
  • 2–3 cardamom pods (optional)
  • 1 bay leaf
